– 1 green chili, slit

– 1/2 teaspoon cardamom pods

– 1 bay leaf
– 2 tablespoons ghee or clarified butter
– 1/2 cup yogurt
– 1/4 cup mint leaves, chopped
– 1/4 cup cilantro leaves, chopped

– 1 teaspoon red chili powder (optional)
– 1 teaspoon turmeric powder
– 1 teaspoon biryani masala (optional)
– Water as needed

Preparation

1. Soak the basmati rice in water for at least 30 minutes. This will help the rice cook evenly and absorb the flavors of the spices.
2. In a separate bowl, mix the yogurt with 1 teaspoon of salt and set aside.
3. In a large pot, heat the ghee over medium heat. Add the cumin, coriander, fennel, black peppercorns, cardamom pods, cinnamon sticks, and bay leaf. Sauté for a few seconds until the spices release their aroma.
